Don Mayita found its first fans at a taco truck parked near Stockton's In-N-Out — the kind of spot where the line tells you everything you need to know. Word spread the way it always does: one order of birria at a time.

It's in the name — Tacos y Birria — and the kitchen takes it seriously. Beef slow-cooks until it falls apart, the consomé runs deep, and quesatacos come out crispy and ready to dip.
